Peanut Butter Mini Chip Granola Bites - No Bake

There are a couple things that you can always count on being in the AKA kitchen cupboards. One of them is peanut butter. . .at least two jars (though usually way more!). Creamy for me and crunchy for the husband.


Another food item that is usually present in this house is granola bars. I usually like to bake them with the aforementioned peanut butter. However, when you have a little house, heating up the oven means heating up more than just the kitchen. So, granola bars have not been in abundance. Read: non-existent.


The husband, however, still has an appetite whether it's 100 degrees outside or not, and raw veggies and fruits don't seem to always satisfy. So, I decided to find a way to make something as close to granola bars as possible without turning on the oven.


These are a lot like the peanut butter bites that I have posted, just take away the need for an oven. The "dough" for these is addicting. . .I just thought I would warn you. You may not actually get to the step of forming the dough into balls, at least not all of it. ;)

Peanut Butter Mini Chip Granola Bites - No Bake
Yield: 12 granola bites

Ingredients
  • 1 C quick (not instant) oats
  • 1/8 C oat bran
  • 1/8 C ground flaxseed
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/3 C no-stir natural peanut butter, creamy or crunchy
  • 1/4 C honey, more if you like sweet granola
  • 2 tbsp mini chocolate chips

Directions
  1. In a medium-sized bowl, stir together oats, oat bran, flaxseed, and salt. Add in vanilla, peanut butter, honey, and chocolate chips. Stir until well-combined.
  2. Refrigerate dough for 30 minutes to allow dough to stiffen. Form dough into 1 inch balls. Eat up!
  3. Store leftovers in refrigerator.
