Chocolate Glazed Peanut Butter Banana Donuts


Happy Friday! I hope that all of you had a good week. Ours seemed to drag a bit and we are glad that Friday has finally arrived! This calls for celebration. . .and what better way to celebrate than by eating donuts?! Specifically peanut butter banana donuts with a thick, creamy chocolate glaze! Maybe your kids started back to school this week and need a little boost of encouragement, make these for breakfast tomorrow!


These donuts are easy to make. But the best part, other than that creamy chocolate glaze, is that you can make these the night before and serve them up the next morning without losing the moisture and freshness of straight out of the oven donuts! Hello convenience! :)


So whatever you have to celebrate, consider bringing these to the party! They won't disappoint. Oh, and did I mention that the donut is sugar-free! So, no excuses with eating these, just skip the glaze and enjoy the peanut butter banana donut! :) Have a great weekend!

Chocolate Glazed Peanut Butter Banana Donuts
Yield: 24 mini donuts

Ingredients
  • For the Donuts
  • 1 C white whole wheat flour
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 2 tbsp granulated sugar substitute or sugar
  • 1 egg
  • 1/4 C non-fat milk
  • 2/3 C mashed ripe banana
  • 3 tbsp creamy peanut butter
  • For the Glaze
  • 1/2 C semi-sweet chocolate chips
  • 1 tsp honey or corn syrup
  • 1 tbsp butter
  • 1 tsp vanilla extract
  • sprinkles, optional

Directions
  1. Preheat oven to 350. Lightly spray donut pan with non-stick cooking spray.
  2. In a medium-sized bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, salt, and sugar. Add in the egg, milk, banana, and peanut butter. Whisk until well-combined.
  3. Pour batter into a pastry bag or a gallon-sized bag with the corner cut off. Fill cavities about 2/3 full.
  4. Bake for 5-9 minutes or until donuts start to turn a light golden brown.
  5. Remove donut pan to cooling rack.
  6. While donuts are cooling, begin preparing glaze. In a small saucepan, melt chocolate chips, honey, and butter over low heat. Stir constantly to avoid burning the glaze. Once melted, stir in vanilla until shiny.
  7. Dip the tops of the donuts into glaze and top with sprinkles. Allow glaze to harden before serving.
